A delicious pineapple favorite with a Mojo twist. This easy recipe will quickly be a favorite treat.
INGREDIENTS
- Mellow Vibes Mango Guava Mojo
- butter for greasing baking dishes
- box yellow cake mix
- 1/4 teaspoon nutmeg ground
- 1/2 teaspoon ground cinnamon ground
- 3 large eggs large
- 2/3 cup water
- 1/3 cup vegetable or other neutral oil
- 1/2 cup butter melted
- 3/4 cup dark brown sugar preferably dark
- 3 cups mango diced
INSTRUCTIONS
Preheat oven to 350 degrees F. Grease 12 (1/2-cup size) ovenproof ramekins with regular butter.
Pour 2 teaspoons melted in the bottom of each ramekin and turn to coat the bottom of the dish.
Spread 1 tablespoon brown sugar on top of melted butter and top with 1/4 cup diced mangoes spread evenly across the bottom of the ramekin. Set aside.
In a large mixing bowl, combine *Mellow Vibes Mango Guava Mojo, cake mix, nutmeg, cinnamon, eggs, and water. Use a whisk or an electric mixer to beat until well combined and the batter is smooth. Pour 1/4-cup batter into each ramekin on tops of mangoes.
Bake for about 30 to 35 minutes or until a toothpick inserted in the center of the cake comes out clean. Let cool for 15 minutes before inverting each cake onto a serving plate. Carefully lift ramekin off to unmold. Serve warm, at room temperature, or chilled.
*Each teaspoon of Mojo is equivalent to 42 mg of THC. Half a teaspoon would be 21 mg etc split evenly between each piece of cake. Dose your cake mix accordingly.
